2In the last minute of cooking the soba noodles, add the frozen edamame beans.

5In a large bowl, add all the soba noodle salad ingredients including the cooled noodles, edamame, Kale coleslaw, baby cucumbers, fresh coriander, and fried shallots.
6Prepare the miso peanut dressing by combining peanut butter, soy sauce, sesame oil, white miso paste, sesame seeds, and water until desired runny consistency is achieved.
7Mix the dressing into the salad.

Rinse noodles with cold water to prevent sticking.
