Christmas Crack "Cookies"

Directions

  1. 1Preheat the oven to 400 degrees Fahrenheit.
  2. 2Place a Ritz cracker into each cup of a silicone cupcake/muffin pan.
  3. 3Add 1 cup of butter to a pan over medium heat.
  4. 4Once the butter is melted, add 1 cup of brown sugar.
  5. 5Bring the mixture to a rolling boil and allow it to boil for 3 minutes, stirring continuously to prevent burning.
  6. 6Remove the pan from the heat and use a cookie scoop to quickly transfer the hot mixture into each cup on the cracker.
  7. 7Place the tray into the oven for 3-4 minutes.
  8. 8Remove the tray from the oven and add a heaping tablespoon of chocolate chips to each cup.
  9. 9Place the tray back in the oven for another 2-3 minutes.
  10. 10Remove from the oven and use the back of a spoon to smooth the melted chocolate.
  11. 11Add desired toppings such as sprinkles or pecan chips.
  12. 12Allow the cookies to cool completely for at least 2 hours.

Tips

  • To ensure the sugar mixture hardens and the toffee cracks, use a candy thermometer to make sure the temperature of the sugar is between 300-310 degrees Fahrenheit.
  • Allow to cool completely for at least 2 hours, or stick them in the fridge for a couple of hours.
