Strawberry Cheesecake Cookies

Directions

  1. 1Add 1 cup of salted butter in a bowl and whisk.
  2. 2Add 1 and 1/4 cup of sugar and zest of one lemon.
  3. 3Add three eggs at room temperature, using only the yolk.
  4. 4Add 2 teaspoons of vanilla extract.
  5. 5Mix well.
  6. 6Add two cups of flour, 1/4 teaspoon salt, 3/4 teaspoon baking soda and 1 teaspoon baking powder.
  7. 7Add 3/4 cup of crushed graham crackers and 1/4 teaspoon cinnamon.
  8. 8Mix well and chill for 2 hours.
  9. 9Add one block of cream cheese to a bowl and mix until smooth.
  10. 10Add about 1/2 cup of powdered sugar and a splash of vanilla.
  11. 11Add a pinch of salt and 6 chopped strawberries.
  12. 12Smash strawberries into the cream cheese.
  13. 13Fold in some whipped cream.
  14. 14Bake at 350 for about 12 minutes or until lightly golden brown.
  15. 15Let the cookies cool completely before adding your filling.
  16. 16Smooth it out with an offset spatula.

Tips

  • Put the eggs in a bowl of water for 5 minutes to get them to room temperature.
  • Don't include the white part of the lemon when zesting.
  • Chill the cookie dough for better flavor and texture.
  • Soften cream cheese in the microwave for five seconds if needed.
  • Smash strawberries into the cream cheese, releasing juices and making the chunks smaller.
  • Do not use Cool Whip. Make whipped cream with heavy cream instead.
  • Don't overbake.
