Crispy and Fluffy Pancakes

Directions

  1. 1In a large bowl, combine the all-purpose flour, baking powder, sugar, and a healthy pinch of salt.
  2. 2In a separate bowl, add full-fat vitamin D milk.
  3. 3Crack two eggs into the milk.
  4. 4Add a splash of vanilla extract.
  5. 5With a fork, crack both yolks and gently mix the wet ingredients thoroughly.
  6. 6Carefully combine the wet ingredients with the dry ingredients.
  7. 7Add some melted butter to the batter.
  8. 8Gently fold in the sides with a spatula, being careful not to overwork the batter.
  9. 9To make the maple syrup, melt down some butter in a pan.
  10. 10Pour your favorite maple syrup into the pan with the melted butter.
  11. 11Once the butter and syrup warm up together, zest down a lemon into the syrup mixture.
  12. 12To make the pancakes, melt butter on a griddle.
  13. 13Once the butter lightly starts to brown, go in with two scoops of pancake mixture for big pancakes.
  14. 14Once the edges start to get crispy and air bubbles peep through, flip the pancake.
  15. 15Generously cover the cooked pancakes with the prepared syrup.
