Red Beans & Rice

Directions
- 1Soak the kidney beans overnight.
- 2Cut sausage into medallions and brown in a pan.
- 3Add your diced holy trinity and garlic, and sauté in olive oil until translucent.
- 4Add your seasonings.
- 5Add your soaked kidney beans and cover with chicken stock or water.
- 6Bring to a simmer, then add bay leaves, the cooked sausage, and your choice of smoked neck bones, turkey wings, or turkey legs.
- 7Cover with a lid and cook until the beans and the meat on the bones are tender.
- 8Pull the meat off the bones, add back to the beans, add more seasonings to taste, and finish with vinegar and liquid smoke.
- 9Serve with cooked jasmine rice, green onions, and hot sauce.

- andouille sausage, cut into medallions
- smoked sausage, cut into medallions
- smoked pork neck bone (optional)
- turkey wing (optional)
- turkey neck (optional)
- ham hock (optional)
- onion, diced
- 1/2 whole green bell pepper
- 1/2 whole yellow or red bell pepper
- 4 whole celery stalk
- 5 clove garlic
- 1-2 tbsp cajun seasoning
- 1-2 tbsp creole seasoning
- all purpose seasoning
- salt
- pepper
- 1-2 tsp garlic powder
- 1-2 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp cayenne powder
- 2 cap fulls vinegar
- 2 dashes liquid smoke
- 3 whole bay leaf
- olive oil
- chicken stock or water
- jasmine rice, cooked
- green onion (optional)
- hot sauce (optional)
