Directions

  1. 1Soak mustard seeds in beer and apple cider vinegar overnight.
  2. 2Prepare a simple syrup by combining beer and brown sugar in a saucepan.
  3. 3Combine the soaked mustard seeds and liquid with the beer and sugar syrup in a blender and process until smooth.
  4. 4Transfer the mustard to a mason jar.
  5. 5Slice onions and caramelize them in a pan over medium heat.
  6. 6Remove the onions from the pan, add the bratwurst, and sear on both sides.
  7. 7Return the caramelized onions to the pan with the brats and add another can of beer.
  8. 8Cover the pan with a lid and let steam until cooked through.
  9. 9Load the brats into toasted brioche buns, top with the caramelized onions, and serve with the homemade beer mustard.
