Creamy Cajun Chicken Pasta

Directions

  1. 1Pat the chicken breasts dry and place them between two sheets of plastic wrap.
  2. 2Tenderize the chicken breasts using a meat tenderizer to make them nice and flat.
  3. 3Drizzle olive oil on both sides of the flattened chicken breasts and rub it in.
  4. 4Mix together onion powder, garlic powder, Cajun seasoning, Old Bay seasoning, dry parsley, and paprika.
  5. 5Generously sprinkle the mixed seasoning onto both sides of the chicken breasts and rub it in.
  6. 6Let the seasoned chicken marinate while boiling the pasta.
  7. 7Boil water in a pot, season with chicken bouillon and salt, then add penne pasta and stir.
  8. 8Cover the pot and let the pasta boil for 7-10 minutes until al dente.
  9. 9Remove the pasta and drain the hot water.
  10. 10Drizzle olive oil into a frying pan, then pan-sear the chicken breasts for about 3 minutes per side. Do not overcook.
  11. 11Set the cooked chicken aside.
  12. 12Add butter to the frying pan. Then, add in a little bit of chopped onion, bell pepper, and diced tomatoes and saute until fragrant.
  13. 13Add garlic and cook until fragrant.
  14. 14Pour in heavy cream and stir.
  15. 15Add parmesan cheese, salt, pepper, and chicken bouillon base to the creamy sauce.
  16. 16Dice the pan-seared chicken breasts into small pieces.
  17. 17Add the diced chicken and the cooked pasta to the creamy sauce. Mix and let it simmer for a short time. Add more parmesan cheese if desired.
