Smoked Mac & Cheese

Directions

  1. 1Pour uncooked macaroni into the bottom of a disposable baking dish.
  2. 2Add large blocks of Velveeta cheese to the bottom of the dish.
  3. 3Cut one stick of butter into pieces and drop it around the macaroni.
  4. 4Pour one pint of heavy whipping cream on top of the macaroni noodles.
  5. 5Pour a half gallon of milk into the dish, making sure to submerge the noodles.
  6. 6Season with your favorite barbecue rub.
  7. 7Add shredded sharp cheddar cheese on top.
  8. 8Add pepper jack cheese on top of that.
  9. 9Cover with foil and put in the smoker.
  10. 10Preheat smoker to 275 degrees. Cook macaroni for at least 2 hours.
  11. 11After 2 hours, remove foil, take a spoon and start mixing it all up, making sure that all that Velveeta gets mixed in.
  12. 12Add 2 cups of ground up Cheez-Its.
  13. 13Spray cooking spray on top of the Cheez-Its.
  14. 14Sprinkle more of that barbecue rub on top.
  15. 15Smoke for another 20 to 30 minutes.

  • sharp cheddar cheese
  • pepper jack cheese
  • 2 cups Cheez-Its
