Start by stabbing your pork shoulder with a fork.

Marinate the pork using sugar, dark soy sauce, and oyster sauce or store-bought Char Siu sauce.

Massage the pork for a couple of minutes to ensure it's well coated by the sauce.

Leave the pork overnight in the fridge so it gets really flavorful.

Place the marinated Char Siu on the rack of your air fryer.

Cook the Char Siu at 380 degrees for 10 minutes.

Brush more sauce onto the Char Siu.

Flip the Char Siu over and continue brushing with sauce.

Cook the Char Siu again for another 10 minutes.

Put some honey on the Char Siu.

Give the Char Siu a final broil for 3 minutes.

Pour the remaining marinade into a saucepan to create the extra sauce.

Let the Char Siu rest for 2 minutes.

Cut the Char Siu into thick slices.

Drizzle the extra sauce over the sliced Char Siu.
