Boursin Chicken Meatballs with One-Pot Cheesy Asparagus Orzo

Directions

  1. 1In a bowl, combine ground chicken, boursin cheese, lemon zest, oregano, basil, bread crumbs, egg, and fresh basil.
  2. 2Mix well and form into meatballs.
  3. 3Bake the meatballs in the oven for 25-30 minutes at 375°F (190°C).
  4. 4In a pan, melt butter and olive oil, add chopped onions and garlic, then saute.
  5. 5Add orzo and bone broth; stir well and bring to a boil, then simmer until the orzo is cooked.
  6. 6Add asparagus and milk, cover the pan and cook for 5 more minutes.
  7. 7Before serving, stir in a generous amount of Parmesan cheese, two more cubes of butter and a little lemon juice.
  8. 8Serve the cheesy asparagus orzo topped with the baked chicken meatballs and extra Parmesan cheese.
