Spatchcock Chicken with Roasted Cabbage

Directions

  1. 1Turn the chicken around so its facing away from you, sit it on your cutting board.
  2. 2Cut the chicken on one side of the backbone all the way down.
  3. 3Insert your knife on the other side of this backbone and cut it all the way down.
  4. 4Place the knife on the breastbone and give it a whack.
  5. 5Pry open the chicken and set it onto a wire rack.
  6. 6In a mixing bowl, combine about a half cup of cider vinegar, two good pinches of black pepper, about a half a teaspoon of onion powder, about a half a teaspoon of garlic powder, about a half a teaspoon of cayenne pepper, and two good pinches of kosher salt.
  7. 7Add about a cup and a half of mayonnaise and whisk everything together.
  8. 8Drizzle some of your white barbecue sauce on top of your chicken.
  9. 9Massage the sauce into the chicken and season with kosher salt.
  10. 10Set the chicken aside.
  11. 11Take a head of cabbage and cut it right through the core.
  12. 12Hold your knife at an angle and remove this piece of core.
  13. 13Slice the cabbage thicker.
  14. 14Place the sliced cabbage onto your half sheet tray.
  15. 15Slice and add one spanish onion to the sheet tray.
  16. 16Place the chicken right on top of the cabbage.
  17. 17Place it in an oven preheated to 450 degrees for about 40 minutes or until the chicken skin gets nice and crispy and the internal temperature of your chicken thigh hits about 160 degrees Fahrenheit.

Tips

  • When cutting the chicken, you can use kitchen shears as well.
  • The backbone can be used to make homemade chicken stock.
  • You can use any combination of vinegars or lemon juice in the white barbecue sauce.
  • Adjust cayenne pepper quantity to your heat tolerance.
  • If you need to drizzle more white barbecue sauce, ensure the spoon does not touch the raw chicken.
  • You can use homemade mayonnaise or add any herbs to the sauce.
  • If you don't own a wire rack, sit your chicken right on top of the cabbage.
