Mini Matilda Chocolate Cake

Directions

  1. 1Preheat oven to 350°F. Grease three 6” or 7” cake pans with butter and dust with flour. Line the bottom with parchment paper rounds.
  2. 2In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. 3In a separate large bowl, whisk together the buttermilk, avocado oil, eggs, and vanilla until combined.
  4. 4Add dry ingredients to the wet ingredients and mix to combine.
  5. 5Pour in the hot coffee and stir quickly until combined.
  6. 6Divide the batter evenly among the cake pans.
  7. 7Bake at 350°F for 25-27 minutes, until a toothpick comes out clean.
  8. 8Remove from oven and cool completely in the pans.
  9. 9In a saucepan over medium heat, add the butter, chocolate, and heavy cream.
  10. 10Sift in the powdered sugar, cocoa powder, salt, and espresso powder.
  11. 11Mix constantly until smooth.
  12. 12Remove from heat and mix in vanilla.
  13. 13Pour the mixture into a large bowl or baking pan. Cover with plastic wrap so it’s directly touching the frosting, to prevent a film from forming.
  14. 14Cool at room temperature for 30 minutes, then chill in the fridge for at least 1-2 hours.
  15. 15Using a serrated knife, thinly slice the tops of each cake layer off to even.
  16. 16Place one cake layer cut side up on a cake stand or platter. Spread ~1/4 of the chocolate frosting all over the top. Repeat with remaining layers.
  17. 17After the last cake layer, spread the remaining frosting all over the cake.
  18. 18Decorate and garnish as desired.
  19. 19Slice and serve.
