3Turn potato 90 degrees and cut the same (crosshatch).
4Cut that into quarters and square off.
5Place the cut potatoes into ice water to draw out the starch.
6Slather the potatoes in Cajun butter.
7Roast the potatoes in the oven at 400°F for about 30 minutes.
8While the potatoes roast, prepare the Chipotle Ranch by combining sour cream, mayonnaise, diced chipotle pepper, garlic powder, onion powder, fresh dill, and sea salt in a mason jar and shaking well.
9For the last few minutes of roasting, set the oven to broil until the potatoes have a nice char.
10Garnish with parsley and Parmesan cheese.
