Directions

  1. 1Add 440 grams of bread flour to a mixing bowl.
  2. 2Add one teaspoon of cooking salt to the bowl.
  3. 3Add one tablespoon of instant or fast action yeast.
  4. 4Mix the dry ingredients well.
  5. 5Add 100 grams of mixed seeds and whisk again to ensure it's fully incorporated.
  6. 6Add 340 milliliters of very warm water.
  7. 7Mix in the dry ingredients until there is no visible flour.
  8. 8Cover the bowl with a tea towel and let the dough proof for two to three hours.
  9. 9Preheat your fan oven to 230 degrees Celsius (450 degrees Fahrenheit).
  10. 10Remove the dough from the sides of the bowl using a spoon or a fork.
  11. 11Flour your surface well with a handful of flour.
  12. 12Place the dough on top of the flour and fold it four times from each side.
  13. 13Tuck and roll the dough to get a ball-like shape.
  14. 14Add some mixed seeds onto a tray.
  15. 15Gently roll your dough around on the tray to get a good coating of seeds over the top.
  16. 16Place the dough back onto the floured surface and cover with a bowl.
  17. 17Let the dough proof for another 15 minutes.
  18. 18Grab an ovenproof pot with a lid and place it into the preheated oven for 15 minutes to heat up.
  19. 19Place your dough onto some baking paper.
  20. 20Pop the dough and baking paper into the preheated pot with the lid on, and then into the oven for 30 minutes.
  21. 21Take the lid off the pot.
  22. 22Cook for a further 10 minutes or until beautifully golden brown.
