Heat a healthy splash of oil in a pan over medium-high heat.

Add 1.5 pounds of halved or quartered baby potatoes to the pan and sprinkle with salt.

Sprinkle half a package of taco seasoning over the potatoes.

Toss everything together to coat the potatoes well with oil and seasonings.

Cook the potatoes for about 5 to 7 minutes until they start to soften, but are not fully done.

Add 1 pound of lean ground beef to the pan.

Season the ground beef with salt and pepper.

Once the meat is done, mix it in with the potatoes.

Add 1 can of Rotel tomatoes with the juice.

Add the other half of the taco seasoning packet.

Pour in about a third of a can of water.

Cover the pan, cut the heat down to medium-low, and cook for about another 10 minutes until the potatoes are fork tender.

Cut the heat once the potatoes are done.

Throw some cheese (sharp cheddar, four cheese blend, or preferred kind) on top.

Cover the pan again and let it sit for a few minutes until the cheese melts.

0.5 package taco seasoning
1 pound lean ground beef
pepper
1 can Rotel tomatoes with the juice
0.5 half taco seasoning packet
0.33 can water
cheese (sharp cheddar, four cheese blend, or whatever kind you like)

You can put some sour cream on top with some pico when serving.
