Preheat oven to 325°F.

Lightly grease a 9x13 baking dish.

Cut chicken into bite-sized pieces and season with salt and pepper.

Add cornstarch to a zip-top bag, toss in chicken, and shake to coat.

Dip chicken pieces into beaten eggs.

Heat oil in a skillet over medium-high heat and brown chicken in batches (it will finish cooking in the oven).

Transfer chicken to prepared baking dish.

Whisk together all sauce ingredients (sugar, vinegar, ketchup, soy sauce, garlic) in a measuring cup.

Pour sauce evenly over chicken.

Bake for 1 hour, stirring every 15 minutes so the sauce thickens and coats the chicken.
