Shepherd's Pie

Directions

  1. 1Unwrap the ground lamb.
  2. 2Heat a pan on the stove.
  3. 3Add a tablespoon of ghee to the pan.
  4. 4Add the ground lamb to the pan, breaking it into small pieces.
  5. 5Season the lamb with salt.
  6. 6Cook the lamb until browned, breaking up any large pieces.
  7. 7Peel the carrot.
  8. 8Dice the carrot into small pieces.
  9. 9Dice the celery into small pieces.
  10. 10Dice the onion into small pieces.
  11. 11Add the diced onion, celery, and carrot to the pan with the lamb.
  12. 12Season with salt.
  13. 13Stir the vegetables and lamb together until the vegetables soften.
  14. 14Add fresh thyme and minced garlic to the mixture.
  15. 15Stir well to combine.
  16. 16Add tomato paste to the pan.
  17. 17Mix the tomato paste into the lamb and vegetable mixture.
  18. 18Return the browned lamb to the pan with the vegetables.

  20. 20Add water or broth to the pan, covering the mixture.

  30. 30Remove the baked potatoes from the oven.
  31. 31Cut the baked potatoes in half.
  32. 32Press the potatoes through a potato ricer into a bowl.
  33. 33Season the mashed potatoes with salt and pepper.
  34. 34Add milk and cubed butter to the mashed potatoes.
  35. 35Grate cheese into the mashed potatoes.
  36. 36Add two egg yolks to the mashed potatoes.
  37. 37Stir the mashed potatoes until smooth and fully combined.
  38. 38Spoon the lamb and vegetable filling into a baking dish, spreading evenly.
  39. 39Transfer the mashed potato mixture to a piping bag with a star tip.
  40. 40Pipe rows of mashed potato over the lamb filling in the baking dish.
  41. 41Grate more cheese over the piped mashed potato.
  42. 42Place the shepherd's pie into the oven to bake until golden brown.
  43. 43Remove the baked shepherd's pie from the oven.
  44. 44Garnish with fresh chives.
  45. 45Cut a portion of the shepherd's pie and serve.

Tips

  • To prep ahead, you can prepare the filling and refrigerate it. The mashed potato can also be prepared and refrigerated separately.
