1Soak 24 red dried Chinese chilies in hot water for about 30-40 minutes.
2De-seed the soaked chilies.
3Mince the 6 garlic cloves.
4Add the de-seeded chilies to a blender.
5Add the minced garlic to the blender.
6Add 2 teaspoons of coriander powder, 1 teaspoon of paprika, 1 teaspoon of salt, and 2.5 teaspoons of cumin powder to the blender.
7Pour in 2 teaspoons of vinegar and 1 tablespoon of olive oil into the blender.
8Add a little bit of the reserved chili soaking water to the blender to help with blending, adding more if needed for desired consistency.
9Blend all ingredients until a smooth paste (puree) is formed.
10Serve the red sauce as desired.
11Store the sauce in a container in the fridge.

If you have caraway seed powder, you can replace 1.5-2 teaspoons of cumin powder with it. Caraway seed powder is slightly darker in color but similar to cumin.
