In a mixing bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Mix and let it bloom for 15 minutes.

Add all purpose flour, bread flour, 1 cup of sugar, and butter to the yeast mixture.

Use a stand mixer with dough hook to knead the dough until smooth. Add vanilla extract and salt during kneading.

Oil a bowl and place the dough into it. Fold to form a smooth ball.

Cover the bowl and let the dough rise for 1 hour until doubled in size.

Turn the dough out on a floured surface. Roll it into a rectangle.

Cut the dough into circles or shape them into balls and flatten them. Second proof the shaped dough on a baking sheet for 45 minutes.

Fry the dough in 180C hot oil until golden brown, flipping halfway. Use parchment paper to help with handling.

Place the fried dough on a wire rack to cool.

Mix sugar and cinnamon in a bowl. While the doughnuts are still hot, fully coat each doughnut in the sugar mixture.
