Directions

  1. 1In a mixing bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Mix and let it bloom for 15 minutes.
  2. 2Add all purpose flour, bread flour, 1 cup of sugar, and butter to the yeast mixture.
  3. 3Use a stand mixer with dough hook to knead the dough until smooth. Add vanilla extract and salt during kneading.
  4. 4Oil a bowl and place the dough into it. Fold to form a smooth ball.
  5. 5Cover the bowl and let the dough rise for 1 hour until doubled in size.
  6. 6Turn the dough out on a floured surface. Roll it into a rectangle.
  7. 7Cut the dough into circles or shape them into balls and flatten them. Second proof the shaped dough on a baking sheet for 45 minutes.
  8. 8Fry the dough in 180C hot oil until golden brown, flipping halfway. Use parchment paper to help with handling.
  9. 9Place the fried dough on a wire rack to cool.
  10. 10Mix sugar and cinnamon in a bowl. While the doughnuts are still hot, fully coat each doughnut in the sugar mixture.
