1Beat cream cheese, sugar, and vanilla until smooth. Scoop small dollops onto a lined tray and freeze for 1 hour.
2In one bowl, whisk flour, cocoa powder, baking soda, and salt. In another, cream butter, sugar, and brown sugar until fluffy. Add egg, milk, vanilla, and red food coloring. Combine wet and dry ingredients, then fold in white chocolate chips.
3Flatten 2 tbsp of dough in your hand, place a frozen cheesecake dollop in the center, and wrap the dough around it. Roll into a ball.
4Preheat oven to 350°F. Place cookie dough balls on a lined baking sheet and bake for 12-14 minutes. Let them cool for 5 minutes before transferring to a wire rack.
