Get a steak about 1 1/2 to 2 inches thick.

Generously salt the steak on all sides and let it sit in the fridge overnight on a wire rack.

Pat the steak dry, add neutral oil and freshly cracked black pepper.

Render the fat cap in a hot pan; sear each side for 1 minute 30 seconds to form a crust.

Reduce heat to low; add butter, fresh herbs, and unpeeled garlic.

Baste the steak with the butter mixture at around 225F, until it bubbles but doesn't burn.

Remove the steak from heat, let it rest, and enjoy.
