Perfect Pan Seared Steak

Directions

  1. 1Get a steak about 1 1/2 to 2 inches thick.
  2. 2Generously salt the steak on all sides and let it sit in the fridge overnight on a wire rack.
  3. 3Pat the steak dry, add neutral oil and freshly cracked black pepper.
  4. 4Render the fat cap in a hot pan; sear each side for 1 minute 30 seconds to form a crust.
  5. 5Reduce heat to low; add butter, fresh herbs, and unpeeled garlic.
  6. 6Baste the steak with the butter mixture at around 225F, until it bubbles but doesn't burn.
  7. 7Remove the steak from heat, let it rest, and enjoy.
