Enchilachos

Directions

  1. 1Brown ground beef in a pan with oil, drain, then stir in taco seasoning, salsa, and diced green chili. Set aside.
  2. 2Gently break up tortilla chips and place into a mixing bowl.
  3. 3Add the meat mixture, enchilada sauce, and a handful of shredded cheese to the bowl and mix well to coat.
  4. 4Transfer the mixture to a greased 9x13 baking dish.
  5. 5Add a layer of cheese on top and cover with foil.
  6. 6Bake in the oven at 350 degrees.
  7. 7Remove the foil once finished. Optionally bake longer if you prefer toastier cheese, then let cool before serving.
  8. 8Top with sour cream and sliced black olives if desired.

  • 1 packet taco seasoning
  • 1/2 cup salsa
  • 1 can diced green chili
  • 1 bag tortilla chips
  • 1 large can enchilada sauce
  • 1 handful shredded cheese
  • cheese, layer
  • sour cream (optional)
  • sliced black olives (optional)
