1Whisk together the tamari, maple syrup, balsamic vinegar, olive oil, garlic granules and smoked paprika in a shallow dish and season with smoked salt.
2Slice the extra firm tofu into thin rashers using a mandolin or peeler.
3Add the sliced tofu into the marinade and mix until all slices are fully covered.
4Heat the olive oil in a large frying pan over medium-high heat.
5Add the tofu in a single layer, working in batches if needed, and cook until deep golden and caramelised (this will only take a minute or two) before flipping and repeating on the other side.
6Toast the bread.
7Spread the vegan mayo generously over both slices of toasted bread.
8Layer up the lettuce on the bottom slice, followed by the tomato, then pile on the tofu bacon.
9Top with the second slice of bread, press down gently and serve straight away.
