1Trim the fat from three pounds of pork shoulder and cut it into manageable sizes.
2Brown the pork on all sides in a hot oiled Dutch oven.
3Add one diced onion and five minced garlic cloves; sauté until softened and golden.
4Return the pork to the pot.
5Add two cups of chicken stock, one orange's juice, half a lime's juice, two bay leaves, two teaspoons of oregano, one teaspoon of chili powder, one teaspoon of cumin, one teaspoon of salt, and pepper to taste.
6Stir, cover, and bake at 300°F for two to three hours.
7Shred the cooked pork using two forks.
8Place the shredded pork on a sheet pan and pour the juices from the Dutch oven over it.
9Spread the pork out and broil for a few minutes until crispy.
10Squeeze the remaining half of the lime over the pork carnitas.
11Garnish with cilantro if desired.
12Serve in tortillas with salsa and your favorite taco sauce.
