Separate the egg yolks from the whites, discarding the whites or reserving them for another use.

Whisk the egg yolks and sugar together until the mixture is lighter in color and airy.

Combine the whole milk and heavy cream in a pot on the stove, then bring to a boil.

Add the vanilla, cinnamon, and nutmeg to the pot.

Remove the pot from the heat once it reaches a boil.

Slowly incorporate the hot milk mixture into the egg yolks by whisking constantly to prevent the eggs from scrambling.

Return the mixture to the pot and simmer on the stove.

Pour the eggnog into a jar and refrigerate to cool.

2 cup whole milk
1 cup heavy cream
1 tbsp vanilla
1 tsp cinnamon
1 tsp nutmeg

Tips
Whisk egg whites with a little sugar until soft peaks form and incorporate into the eggnog for a creamier texture.
The eggnog can be used in lattes or as a creamer for coffee.
