1In a large bowl, mix together the crumbled feta, honey, thyme leaves, salt, black pepper, and minced garlic.
2Place olive oil in a small bowl.
3Gently brush half of one phyllo sheet with olive oil.
4Carefully fold over the non-brushed side so it's now in half.
5With scissors or a knife, cut the folded sheet in half lengthwise.
6On the short end, add 1 tablespoon of feta mixture.
7Brush the sides and fold them in.
8Brush the outside of those folded sides and begin to roll like a burrito.
9Brush all the feta rolls once more with olive oil and add flaky salt.
10Place on prepared pan.
11Bake for 18-20 minutes, until golden brown.
12Combine honey, olive oil, chili pepper flakes, and thyme leaves in a small saucepan.
13Stir the sauce ingredients together.
14Pour the prepared sauce into a serving dish.
15Serve the baked feta rolls with the chili honey sauce.

Tips
For the Feta Rolls, preheat oven to 425F and line a baking sheet with parchment paper.
For the Sauce, combine all ingredients in a small saucepan over medium-high heat, bring to a boil, then simmer for 5 minutes. Cool to room temperature before serving.
