Slice your chicken thighs in half.

Add chicken to a bowl along with yogurt, olive oil, lemon zest and juice, fresh garlic, salt, paprika, cumin, oregano, coriander, and pepper.

Cover and marinate for up to 12 hours.

For your homemade spit, use a thick slice of onion and two wooden skewers.

Push your chicken down through, layering.

Roast in a 350° oven until the internal temperature reaches 165°F.

For your tzatziki, add yogurt and grated and dried cucumber to a bowl along with fresh garlic, lemon juice, dill, and salt.

Once rested, slice the chicken off your spit.

To a warmed pita, add your tzatziki, your chicken, some tomatoes, cucumbers, and red onion, and some feta.
