Greek Chicken Gyros on a Homemade Spit

Directions

  1. 1Slice your chicken thighs in half.
  2. 2Add chicken to a bowl along with yogurt, olive oil, lemon zest and juice, fresh garlic, salt, paprika, cumin, oregano, coriander, and pepper.
  3. 3Cover and marinate for up to 12 hours.
  4. 4For your homemade spit, use a thick slice of onion and two wooden skewers.
  5. 5Push your chicken down through, layering.
  6. 6Roast in a 350° oven until the internal temperature reaches 165°F.
  7. 7For your tzatziki, add yogurt and grated and dried cucumber to a bowl along with fresh garlic, lemon juice, dill, and salt.
  8. 8Once rested, slice the chicken off your spit.
  9. 9To a warmed pita, add your tzatziki, your chicken, some tomatoes, cucumbers, and red onion, and some feta.
