Directions

1Start off with some olive oil and a little bit of butter in a pan.
2Add finely chopped shallots and cook them down for a couple of minutes.
3Add chopped mushrooms and let them cook very slowly, allowing them to shrink in size.
4Add pepper and a generous amount of lemon juice, then stir and let the mushrooms cook a bit more.
5Add chopped capers and mix everything together.
6Pour in a bunch of heavy cream and simmer it until it gets really thick.
7Add parsley and a bit of salt, then stir.
8Cut the heat and finish with a knob of butter, letting the residual heat melt it through to make the sauce nice and glossy.
