French Dip Grilled Cheese

Directions

  1. 1Prep the vegetables by cutting the carrots, celery and onion.
  2. 2Cut up the chuck roast into chunks.
  3. 3Season the chuck roast with salt and pepper.
  4. 4Brown off the meat in a Dutch oven.
  5. 5Remove the meat from the Dutch oven.
  6. 6Add the chopped carrots, celery, and onion to the pot.
  7. 7Cook the vegetables for 5 minutes on medium heat.
  8. 8Add beef bouillon to the vegetables and mix well.
  9. 9Add red wine to the pot and simmer on medium heat.
  10. 10Add the browned meat back to the Dutch oven.
  11. 11Cover the meat with beef stock.
  12. 12Add garlic to the pot.
  13. 13Add fresh herbs (rosemary, sage, and thyme) to the pot.
  14. 14Cover the Dutch oven with a lid.
  15. 15Place the Dutch oven in a 375°F (190°C) oven for at least 3 hours until the meat shreds apart easily.
  16. 16Remove the shredded meat from the pot and place it in a bowl.
  17. 17Strain the vegetables from the liquid to get the au jus.
  18. 18Reduce the au jus.
  19. 19Make the horseradish cream sauce by combining mayonnaise, sour cream, prepared horseradish, and a squeeze of lemon juice. Add salt to taste.
  20. 20Add butter to a pan and toast the sourdough bread.
  21. 21Add shredded cheddar and Monterey Jack cheese to the toasted bread and melt it.
  22. 22Add shredded meat to one side of the bread with melted cheese.
  23. 23Add horseradish cream sauce on top of the shredded meat.
  24. 24Close the sandwich by placing the other half of the bread on top.

  • 1 tbsp prepared horseradish
  • lemon juice

Tips

  • You can use short rib if you like, but chuck roast salted up and slow-cooked will taste just like short rib and is cheaper.
  • Set the pot in the oven and forget about it for hours until it shreds apart nicely and easily.
  • Add salt to taste to the horseradish sauce.
