Prep the vegetables by cutting the carrots, celery and onion.

Cut up the chuck roast into chunks.

Season the chuck roast with salt and pepper.

Brown off the meat in a Dutch oven.

Remove the meat from the Dutch oven.

Add the chopped carrots, celery, and onion to the pot.

Cook the vegetables for 5 minutes on medium heat.

Add beef bouillon to the vegetables and mix well.

Add red wine to the pot and simmer on medium heat.

Add the browned meat back to the Dutch oven.

Cover the meat with beef stock.

Add garlic to the pot.

Add fresh herbs (rosemary, sage, and thyme) to the pot.

Cover the Dutch oven with a lid.

Place the Dutch oven in a 375°F (190°C) oven for at least 3 hours until the meat shreds apart easily.

Remove the shredded meat from the pot and place it in a bowl.

Strain the vegetables from the liquid to get the au jus.

Reduce the au jus.

Make the horseradish cream sauce by combining mayonnaise, sour cream, prepared horseradish, and a squeeze of lemon juice. Add salt to taste.

Add butter to a pan and toast the sourdough bread.

Add shredded cheddar and Monterey Jack cheese to the toasted bread and melt it.

Add shredded meat to one side of the bread with melted cheese.

Add horseradish cream sauce on top of the shredded meat.

Close the sandwich by placing the other half of the bread on top.

cheddar and monetary jack cheese

pepper
2 tbsp mayonnaise
2 tbsp sour cream
1 tbsp prepared horseradish
lemon juice

Tips
You can use short rib if you like, but chuck roast salted up and slow-cooked will taste just like short rib and is cheaper.
Set the pot in the oven and forget about it for hours until it shreds apart nicely and easily.
Add salt to taste to the horseradish sauce.
