Saucy Peanut Chicken Bowls

Directions

  1. 1Heat toasted sesame oil in a large skillet or wok over medium heat. Add the garlic and ginger and cook for about 1 minute, or until fully melted if using frozen cubes.
  2. 2Add the ground chicken to the pan and turn the heat up to medium-high. Use a wooden spoon or meat masher to break up the meat. Cook for 6-7 minutes, stirring often, until the chicken is fully cooked and starting to brown.
  3. 3While the chicken cooks, make the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice wine vinegar, sriracha, lime juice, honey, and water.
  4. 4Add the sauce to the skillet with the ground chicken and cook for 1-2 minutes until the sauce slightly thickens.
  5. 5Cook the rice according to package directions. Add rice to shallow bowls.
  6. 6Top with the chicken, cucumber, scallion, cilantro, chopped peanuts, and lime wedges.

  • 2 teaspoons sriracha
  • 1 lime lime juice
  • 1 tablespoon honey
  • 0.25 cup water
  • 2 packets Trader Joe's frozen jasmine rice

  • chopped cilantro
  • chopped roasted salted peanuts
  • lime wedges

Tips

  • If you don’t want to make your own sauce, feel free to use 1 jar Trader Joe’s Thai Peanut Satay Sauce! You may need to add water to make it more saucy.
  • If the sauce gets too thick, stir in more water. Taste and season with more soy sauce if desired.
