Add 2 cups of warm water to a mixing bowl.

Add 2 1/4 teaspoons of yeast to the warm water.

Add 1 tablespoon of sugar to the mixture.

Whisk the mixture and let it sit on the counter for 5 minutes to activate the yeast.

Once the yeast is activated, add 5 cups of all-purpose flour to the bowl.

Add half a cup of melted butter to the mixture.

Add a pinch of salt to the mixture.

Place the mixture into an electric mixer and knead for about 5 minutes until it forms a soft dough.

Knead the dough with your hands for a couple of minutes until it is very soft.

Grease the bowl with olive oil.

Place the dough ball back into the greased bowl.

Cover the bowl and place it in a warm spot for about an hour until the dough doubles in size.

Once the dough has doubled in size, cut it into 10 equal portions, each weighing about 140-150 grams.

Roll each portion of dough into a smooth ball.

Cut parchment paper into squares, one for each bagel.

Take each dough ball, create a hole in the center, and shape it into a bagel, then place it on a square of parchment paper.

Prepare a pan of warm water with approximately a quarter cup of baking soda.

Once the water is hot and the baking soda is dissolved, add the bagels in batches, still on their parchment paper, into the water.

Let the bagels sit in the water for about 45 seconds on each side.

Remove the bagels from the water using a slotted spoon and place them on a cookie tray lined with parchment paper.

Brush each bagel with an egg wash.

Leave half of the bagels plain and sprinkle the rest with everything bagel seasoning.

Bake the bagels in the oven at 400 degrees Fahrenheit for 15 minutes.
