Lemon Cookies
Directions
- 1Zest one lemon and mix it with one cup of sugar.
- 2Add one cup of softened butter to the mixture and mix.
- 3Add two eggs, two tablespoons of lemon juice and one teaspoon of vanilla extract.
- 4Whisk the wet ingredients.
- 5Add two cups of flour and mix with a spatula until well combined.
- 6Roll the dough into balls using a cookie scoop and coat them with powdered sugar.
- 7Place the balls on a baking sheet and bake until golden brown.
- 8Make an indentation in each cookie with a spoon and add a dollop of lemon curd.
