Brown Butter Apple Fritter Focaccia

Directions

  1. 1Brown the butter in a pan.
  2. 2Pour the browned butter into a bowl.
  3. 3Add the light brown sugar, ground cinnamon, and vanilla extract to the browned butter and mix.
  4. 4Peel the apples.
  5. 5Core the apples.
  6. 6Finely dice the apples.
  7. 7Mix 1/3 of the diced apples with half of the cinnamon filling.
  8. 8Line the parchment paper on the tray with melted salted butter.
  9. 9Transfer the focaccia dough to the tray and gently stretch it to the edges.
  10. 10Spread the apple and cinnamon filling over the dough.
  11. 11Fold the dough as seen in the video, placing one side over the other.
  12. 12Flip the dough over.
  13. 13Cover and let the dough proof at room temperature for 1-1.5 hours.
  14. 14Warm up the remaining cinnamon sugar butter to a drizzling consistency.
  15. 15Mix the warmed cinnamon sugar butter with the remaining 2/3 diced apples.
  16. 16Spread the mixture evenly over the top of the dough and dimple it in.
  17. 17Bake for 23-25 minutes at 215°C/420°F.
  18. 18While baking, whisk powdered sugar, milk, and a dash of vanilla extract and cinnamon for the glaze.
  19. 19Drizzle the glaze over the focaccia once it's out of the oven.
  20. 20Brush the glaze on top, sides, and bottom of the focaccia.
  21. 21Transfer the focaccia to a cooling rack for the glaze to harden (about 15 minutes).

Tips

  • Browning the butter first gives more complex caramel notes to the filling, and it is worth the extra effort.
  • Warm up the cinnamon sugar butter to make it drizzling consistency again, as it hardens as it cools.
