Place a saucepan on medium-low heat.

Add 1 cup of coconut sugar to the saucepan and mix until it starts to caramelize on the bottom.

Immediately add 1 cup of water and stir.

Add the spices: 1 tsp cardamom, 2 whole star anise, 1 tsp ground cinnamon, 3 cinnamon sticks, 1 tsp whole cloves, 1 tsp allspice berries, 1/2 tsp nutmeg, 1 tsp coriander seeds, 4 pieces of ginger, 2 pieces of lemon peels, 1 piece of lime peel, and 2 pieces of orange peels.

Add 1 cup of pitted cherries.

Mix the ingredients.

Let it come to a low boil.

Smash the cherries to extract all flavors.

Strain the mixture into a bowl.

Add 1 tsp vanilla extract and 1 tsp almond extract.

Whisk until fully incorporated.

Add desired amount of syrup into a glass with some ice.

Add seltzer water.

Tips
If fresh cherries are out of season, buy them frozen.
