Homemade Dr. Pepper

Directions

  1. 1Place a saucepan on medium-low heat.
  2. 2Add 1 cup of coconut sugar to the saucepan and mix until it starts to caramelize on the bottom.
  3. 3Immediately add 1 cup of water and stir.
  4. 4Add the spices: 1 tsp cardamom, 2 whole star anise, 1 tsp ground cinnamon, 3 cinnamon sticks, 1 tsp whole cloves, 1 tsp allspice berries, 1/2 tsp nutmeg, 1 tsp coriander seeds, 4 pieces of ginger, 2 pieces of lemon peels, 1 piece of lime peel, and 2 pieces of orange peels.
  5. 5Add 1 cup of pitted cherries.
  6. 6Mix the ingredients.
  7. 7Let it come to a low boil.
  8. 8Smash the cherries to extract all flavors.
  9. 9Strain the mixture into a bowl.
  10. 10Add 1 tsp vanilla extract and 1 tsp almond extract.
  11. 11Whisk until fully incorporated.
  12. 12Add desired amount of syrup into a glass with some ice.
  13. 13Add seltzer water.
  14. 14Stir and serve.
