In a bowl, add two cups of sifted self rising flour and place it in the freezer.
In a cast iron skillet, add about a tablespoon of bacon drippings.
Grate one stick of frozen butter and add it to the bowl with the flour from the freezer.
Fork the butter into the flour (cutting it in).
Add cold milk a little at a time and mix until the dough starts forming.
Flour a clean surface, place the dough, and form it into a ball.
Fold the dough over itself 12 times, adding flour if it gets sticky. Be light with your hands so you don't end up with flat biscuits.
Place the cutter in the freezer until you're ready to use it. Dip the cutter in flour and cut out the biscuits. Make sure to cut straight down and straight back up.
Place the biscuits in the hot cast iron skillet and bake for 15 minutes at 425 degrees, then broil until the tops get golden brown.
