One-Pan Greek Parmesan Chicken & Potatoes with Roasted Garlic Tzaziki

Directions

  1. 1Combine melted butter, grated parmesan, garlic, and pepper in a bowl.
  2. 2Pour the butter mixture into a baking dish.
  3. 3Add baby potatoes to the baking dish.
  4. 4Add chicken thighs to the baking dish.
  5. 5Drizzle olive oil over the chicken and potatoes.
  6. 6Season with oregano, paprika, salt, pepper, and garlic powder.
  7. 7Add dijon mustard to the chicken.
  8. 8Squeeze fresh lemon juice over the chicken.
  9. 9Rub the seasonings and liquids into the chicken and potatoes.
  10. 10Grate lemon zest over the chicken.
  11. 11Place two halved garlic heads on a piece of foil, drizzle with olive oil and sprinkle with salt.
  12. 12Add grated parmesan cheese over the chicken and potatoes.
  13. 13Bake until golden and cooked through.
  14. 14Serve the chicken and potatoes over roasted garlic tzaziki.
