Make a super simple sausage seasoning by adding all ingredients into a jar and shaking it to mix. The full ingredient list for the seasoning is in the caption.
Grab a sheet pan, add diced red and green bell peppers.
Add salt to the peppers.
Mix the peppers.
Add the peppers to the oven to roast at 425°F for 30 minutes.
Add ground chicken (or any ground meat) to a bowl.
Add about 50g (4 tablespoons) of the sausage seasoning and 15g of olive oil to the ground meat.
Mix the seasoning and olive oil into the ground meat.
Let the seasoned meat sit for at least 15 minutes.
Add the seasoned ground meat to a hot pan.
Cook the meat until it's fully browned.
Add the cooked chicken sausage right on top of the roasted peppers on the sheet pan.
Mix the chicken sausage and peppers together on the sheet pan.
Pour the blended egg mixture over the chicken sausage and peppers. The egg mixture consists of 500g egg whites, 3 eggs, 200g cottage cheese, 10g corn starch, 10 slices American cheese, 5g nutritional yeast (optional), and salt to taste.
Toss the sheet pan into the oven to bake at 425°F for 20 minutes.
Let the baked mixture cool for 10 minutes.
Slice the cooked mixture into 12 pieces.
Assemble your burritos by placing one slice of the mixture onto each tortilla.
Roll the burritos.

Tips
Adding baking soda can transform any lean ground meat into something that tastes much more similar to a higher fat sausage by retaining moisture and making the meat juicier and more tender.
Store the burritos frozen and reheat when ready to eat.
