Directions
- 1Prepare the strawberry jam by cooking diced strawberries with sugar.
- 2In a bowl, mix together cream cheese, powdered sugar and vanilla extract until smooth.
- 3Scoop the mixture onto a baking sheet.
- 4Cream together butter and sugar.
- 5Add eggs and vanilla extract to the mix.
- 6Add flour and mix until combined.
- 7Gently fold in the strawberry jam.
- 8Scoop the cookie dough into balls and flatten slightly.
- 9Place a dollop of cream cheese mixture on half of the cookie dough balls, top with another cookie dough ball and pinch to seal.
- 10Roll the cookie dough balls in sugar.
- 11Bake the cookies.
