Preheat oven to 200°C (400°F).

Line a large baking tray with parchment paper.

In a bowl, toss potatoes with 1 tbsp olive oil, half the garlic, salt, pepper, and oregano.

Spread the seasoned potatoes on the tray.

Pat chicken thighs dry.

Rub chicken thighs with remaining olive oil, garlic, paprika, thyme, salt, and pepper.

Arrange chicken thighs on the tray among the potatoes.

Roast for 35–45 minutes until chicken skin is crispy and internal temperature reaches 75°C (165°F).

Squeeze fresh lemon juice over everything before serving.

Garnish with parsley before serving.
