Oven-Baked Chicken Thighs with Potatoes

Directions

  1. 1Preheat oven to 200°C (400°F).
  2. 2Line a large baking tray with parchment paper.
  3. 3In a bowl, toss potatoes with 1 tbsp olive oil, half the garlic, salt, pepper, and oregano.
  4. 4Spread the seasoned potatoes on the tray.
  5. 5Pat chicken thighs dry.
  6. 6Rub chicken thighs with remaining olive oil, garlic, paprika, thyme, salt, and pepper.
  7. 7Arrange chicken thighs on the tray among the potatoes.
  8. 8Roast for 35–45 minutes until chicken skin is crispy and internal temperature reaches 75°C (165°F).
  9. 9Squeeze fresh lemon juice over everything before serving.
  10. 10Garnish with parsley before serving.
