Directions

  1. 1Start with sugar, then glucose, a little bit of water and 40g of honey.
  2. 2Cook that to 165°C.
  3. 3Add the bicarbonate of soda and whisk.
  4. 4Pour the mixture onto a baking sheet.
  5. 5Cut the honeycomb once it has cooled down.
  6. 6Melt the 70% chocolate in a double boiler.
  7. 7Dip pieces of honeycomb into the melted chocolate.
  8. 8Sprinkle with Maldon salt.

  • 100 g liquid glucose
  • 40 ml water
  • 40 g honey
  • 1 tsp bicarbonate of soda
  • 100 g 70% chocolate
  • 1 pinch Maldon salt
