Honeycomb
Directions
- 1Start with sugar, then glucose, a little bit of water and 40g of honey.
- 2Cook that to 165°C.
- 3Add the bicarbonate of soda and whisk.
- 4Pour the mixture onto a baking sheet.
- 5Cut the honeycomb once it has cooled down.
- 6Melt the 70% chocolate in a double boiler.
- 7Dip pieces of honeycomb into the melted chocolate.
- 8Sprinkle with Maldon salt.

- 100 g liquid glucose
- 40 ml water
- 40 g honey
- 1 tsp bicarbonate of soda
- 100 g 70% chocolate
- 1 pinch Maldon salt
