Directions

1Start with sugar, then glucose, a little bit of water and 40g of honey.
2Cook that to 165°C.
3Add the bicarbonate of soda and whisk.
4Pour the mixture onto a baking sheet.
5Cut the honeycomb once it has cooled down.
6Melt the 70% chocolate in a double boiler.
7Dip pieces of honeycomb into the melted chocolate.
8Sprinkle with Maldon salt.
