Directions
- 1Preheat oven to 350°F and line an 8x8 inch pan.
- 2In a large bowl, add sugar and lemon zest; rub together until it looks like wet sand.
- 3Add softened butter and beat until light and fluffy.
- 4Add eggs one at a time, mixing until combined.
- 5Add lemon juice and vanilla, mix until combined.
- 6Fold in flour and salt; do not overmix.
- 7Add batter to prepared pan, evening out the top.
- 8Bake for 20-25 minutes. Do not overbake. Let cool in pan until room temperature.
- 9For the lemon icing: In a small bowl combine powdered sugar, lemon juice, and lemon zest.
- 10Pour icing on top of cooled brownies and spread evenly.
- 11Sprinkle lemon zest on top.
