Directions

  1. 1Toss the cut potatoes with olive oil, half a package of zesty Italian dressing mix, and salt.
  2. 2Spread the potatoes on a foil-lined sheet pan in an even layer.
  3. 3Cook the potatoes in an oven preheated to 400 degrees for 10 minutes.
  4. 4In a bowl, toss the green beans with a splash of olive oil, the remaining half of the Italian dressing mix, fresh lemon juice, and salt.
  5. 5Remove the pan from the oven and push the potatoes to one side.
  6. 6Top each chicken cutlet with a spoonful of basil pesto, a slice of tomato, a slice of mozzarella, and torn pieces of prosciutto.
  7. 7Place the prepared chicken on the empty side of the sheet pan and add the seasoned green beans in the middle.
  8. 8Return the pan to the oven and cook for 20 to 25 minutes until the chicken is done and the potatoes are fork tender.
  9. 9Drizzle the finished dish with balsamic glaze before serving.

  • italian dressing, marinated for one hour
  • 1 spoonful basil pesto
  • tomato, sliced
  • mozzarella, sliced
  • prosciutto, torn into pieces
  • balsamic glaze (optional)
