Directions
- 1Cut the chicken thighs into small pieces.
- 2Add oil and Smothered Chicken Seasoning to the chicken pieces and mix well.
- 3Cut the onion, red bell pepper, green bell pepper, and jalapeno pepper.
- 4Turn on the grill and add oil.
- 5Add the onion, red bell pepper, green bell pepper, and jalapeno pepper to the hot grill and cook.
- 6Add the seasoned chicken to the grill and cook, stirring occasionally.
- 7Place a tortilla on the grill and add a layer of cheese.
- 8Add the cooked chicken and vegetables to the cheese.
- 9Add another layer of cheese.
- 10Fold the tortilla in half to create a quesadilla.
- 11Cook the quesadilla on the grill until golden brown and the cheese is melted.
- 12Cut the avocados in half, remove the pit, and mash them in a bowl.
- 13Add salt, pepper, cilantro, chopped onion, chopped tomato, and lemon juice to the mashed avocados and mix well.
- 14Serve the quesadilla with guacamole.
