1Start by adding 1 cup (120 grams) of all-purpose flour to a bowl.
2Add 1/2 cup of butter to the flour. You can cut it into small pieces or grate it from frozen for ease, especially if you have arthritis.
3Add a good pinch of salt (about 1/4 teaspoon) and about 1 teaspoon of sugar.
4Flatten the butter with the flour by pressing it out between your fingers to create flake-shaped pieces, which will melt to create air pockets for flakiness.
5Add about half of 1/4 cup (60 ml) of very cold water. You might not need all of it.
6Toss it in and give it a squeeze. If it holds together, you don't need any more water.
7Dump the dough out onto a surface and squeeze it together.
8Start folding it over on itself to create layers of butter and flour, like a laminated dough, which helps to stack up the flakes of butter.
9The pie dough is now ready for the fridge. Wrap it up and chill the butter before rolling the pie.
