1Preheat oven to 400F. Line a baking sheet with parchment paper.
2Spray sweet potato halves with cooking spray, coat with salt and pepper and place flat side down on the baking sheet. Bake for 40-50 minutes until tender.
3While sweet potatoes are baking, preheat a large saute pan to medium heat.
4Add ground beef and crumble it with a spatula.
5Once the beef is half-pink, add diced onions, bell peppers, paprika, salt and pepper. Cook until tender, about 6-8 minutes.
6Add minced garlic and cook until fragrant, about 1-2 minutes.
7Add ketchup, mustard, and Worcestershire sauce, stir well.
8Reduce heat to medium-low, cover and simmer for 10-15 minutes.
9Turn off the heat and stir in parmesan cheese until melted.
10Place a sweet potato half in a bowl, top with the sloppy joe mixture. Add toppings like parmesan cheese, chives and pickles.
