Directions

  1. 1Add diced chicken breast to the slow cooker along with salt, garlic powder, onion powder, black pepper, Italian seasoning, and butter. Mix well.
  2. 2Grab a handful of garlic cloves, add a little bit of oil and salt, and enclose them in foil.
  3. 3Add the foil-wrapped garlic straight to the side of your slow cooker with the chicken.
  4. 4Cook the chicken and garlic on high for 2-3 hours or on low for 3-4 hours.
  5. 5Remove the garlic from the slow cooker.
  6. 6Shred up the cooked chicken using a spatula.
  7. 7Open the foil to reveal the perfectly roasted garlic and add it to the shredded chicken, melting it into the chicken for flavor.
  8. 8Add half-cooked pasta (cooked to 50% of recommended time) to the slow cooker with the chicken.
  9. 9Pour over the high protein 3-cheese Alfredo sauce, made with 800g 2% cottage cheese, 120g 1/3 fat cream cheese, 120g Parmigiano Reggiano, 60g Asiago, 360ml milk, and salt & pepper to taste.
  10. 10Give everything a good mix.
  11. 11Add about a half cup of reserved pasta water.
  12. 12Cover the slow cooker on high for another 15-20 minutes.
  13. 13Serve the 3 Cheese Chicken Alfredo into 10 equal-sized containers.
