Directions

  1. 1Roast pasilla peppers, tomatillos, garlic, and red onion in the oven at 400 degrees for 15 minutes until charred.
  2. 2Grind fresh sirloin steak using a meat grinder.
  3. 3In a large pot, brown the ground sirloin. Add chili seasoning, onion powder, garlic powder, New Mexico chili powder, and achuiete paste. Mix well.
  4. 4Add the roasted vegetables to the pot, along with a couple of sirloin steaks.
  5. 5Blend the tomato paste and chipotle pepper in a blender and add it to the pot.
  6. 6Add canned tomato sauce and chunks of tomato to the pot.
  7. 7Add water and chili mix, and simmer for 3 1/2 hours until reduced.
  8. 8Add beans.
  9. 9Bake a round bread bowl in the oven while chili simmers.
  10. 10Once the chili has reduced and thickened, fill the bread bowl with chili. Top with cheddar cheese, green onions, and sour cream.

  • 1 tbsp echuiete paste
  • 1 chipotle pepper
  • 1 cup tomato paste
  • 1 can tomato sauce
  • 1 can chunks of tomato
  • 2 gallons water
  • 1 box chili mix
  • 1 can beans
  • 1 cup cheddar cheese
  • 1 small bunch green onions
  • 1 cup sour cream
  • 1 round bread bowl
