Thinly slice the cucumber using a mandoline slicer.

Add rice wine vinegar to the sliced cucumbers.

Pat dry the chicken thighs with a paper towel.

Season the chicken thighs with salt and pepper.

Coat the chicken thighs in cornflour.

Finely chop the garlic.

Finely chop the ginger.

Add oil to a pan and place the cornflour-coated chicken thighs in it.

Fry the chicken thighs until golden and crispy.

Remove the chicken thighs from the pan and set aside.

Melt butter in the same pan.

Sauté the chopped garlic and ginger in the butter.

Add soy sauce to the pan.

Add sweet chilli sauce to the pan.

15 g ginger
1 tbsp groundnut oil
1 tbsp unsalted butter
2 tbsp mirin
2 tbsp sweet chilli sauce
250 g cooked jasmine rice
1 steamed pak choi
1 soft-boiled egg
