Potato Protein Meringue

Serves 1

Directions

  1. 1Add potato protein, xanthan gum, and water to a large bowl.
  2. 2Whip for about 5 minutes until soft peaks form. A stand mixer works best here.
  3. 3Slowly add sugar, a little at a time, while continuing to whip.
  4. 4Beat until firm, glossy peaks form.

Ingredients

  • 28 g potato protein isolate
  • 2.4 g xanthan gum
  • 220 mL water
  • 400 g sugar

Equipment

large bowlstand mixer

Tips

  • For egg replacement in general: 1 egg = 5.6g potato protein isolate + 44g water + 0.48g xanthan gum (optional for stability).
  • Use Solanic 300, Perfectasol 300, or Potatowhip COLD (Sosa brand) as they are easier to use than version 200.
  • Slowly add sugar while whipping for firm, glossy peaks.
