1To make the oleo saccharum, peel 6 lemons and place them in a bowl with 2 tablespoons of sugar.
2Muddle the lemon peels and sugar to extract the oils and create a syrup. Let this sit for at least 8 hours, or even a day.
3Add 3/4 cup of fresh lemon juice to the oleo saccharum.
4Add 1 cup of simple syrup to the mixture.
5Add 2 cups of aged rum to the mixture.
6Add 1 cup of whiskey to the mixture.
7Pour the mixture into a larger container.
8Add 2 cups of whole milk to the container.
9Let the mixture sit for at least an hour or two until the curds start to filter.
10Place a paper towel folded in half into a strainer set over another bucket or container.
11Pour the milk punch mixture a little at a time into the paper towel-lined strainer, allowing it to filter until clear.
12Serve the clarified milk punch over a large rock of ice.
13Freshly grate nutmeg over the top for garnish.

Tips
Do not heat the milk. The milk reacts with the acidity, then it curds up, and those curds act like a filtration system. If you have the time, it's actually pretty fun. The end result drastically changes the cocktail.
